In Caltagirone, the feast of the Immaculate Conception takes place on 8 December. On the occasion of the celebrations there is usually a procession with a parade of the Historical Parade of the Civic Senate and the traditional Festival of the "Muffuletta".
The parade of the Historical Parade of the Civic Senate is a tradition that dates back to many centuries ago and is much older than the Baroque period which, however, has profoundly influenced its characteristics and appearance. The parade in fact re-proposes the figures of the "Senatorial Procession of the "600", consists of about thirty people in period costumes: patricians, jurors, mazzieri, dressing rooms, attendants, halberdiers, trumpeters, fifes and drummers, as well as carriages with shooting to four horses reserved for the authority.
According to an ancient tradition, before the fasting done by vote, the eve of the festival was held the "muffulette", that is sandwiches with the aroma of wild fennel, which were sold and eaten hot in the early hours of the eve, before starting the fast. Although today eve fasting is now unusual, the tradition of "muffolette" still exists : the bakers commission children and young people who, in the early morning and evening hours of 6 and 7 December, go out into the streets with baskets full of these sandwiches.
