Pasta Reale is a mixture of sweetened almonds, tied with egg white and flavored with vanilla. It is one of the most popular Sicilian typical products in the world, but in the simplicity of its ingredients it hides a great richness and an intense flavor, which is why in Sicilian dialect it is called Pasta Riali, real pasta. The birth of Pasta Reale is traced back to the Arabs, who introduced rich and spicy dishes to Sicily. The Arabs mixed sugar with dried fruit such as ground almonds, and spread this recipe throughout Sicily. The royal pasta in addition to being considered a dessert in its own right, is the basis for many other Sicilian sweets: with it, martorana fruit, the Easter sheep, the olivette di Sant'Agata are prepared and it is also the basis for the wrapping of the Sicilian cassata.
