Pesto Pantesco, also known as ammoggliu,
is one of the specialties of the cuisine of the island of Pantelleria. It is a fresh, simple and summery recipe, and requires a few minutes of preparation because the ingredients used do not need cooking. The ingredients used are: Pantelleria capers, tomatoes, basil, parsley, oregano, almonds, garlic and chilli.
Pantesco pesto can be enjoyed as a condiment for bruschetta, pasta or to accompany fresh grilled fish.
