The "pizza muddiata", a Sicilian term that means "soft pizza", is an ancient and classic preparation in Iblea cuisine. The dough of the muddiata pizza is well leavened, a procedure that gives it a high, soft and spongy base. The base of the pizza is in fact 2-3 centimeters high and is very soft.
The muddiata pizza recalls the Palermo sfincione but differs from it for the topping.
the muddiata pizza is seasoned with strictly homemade tomato paste , "u strattu", tomato sauce, oregano, extra virgin olive oil and other ingredients that can vary such as grated cheese, anchovies, cooked ham and black olives.
