Sicilian sheep ricotta is a Sicilian culinary excellence. In the 19th century ricotta was called the cheese of the poor but in reality ricotta is not a cheese but a dairy product, in fact it is obtained through the coagulation of whey proteins, i.e. the liquid part that separates from the curd during cheesemaking.
Sicilian ricotta is the basis of many typical Sicilian sweet and savory preparations among which the cassata siciliana .
