Spaghetti with bottarga

Spaghetti with bottarga is a dish that we can only find in some seaside villages in Sicily. Bottarga, obtained from the salting and drying of tuna eggs, is not a common ingredient and has a very particular and decisive flavor, salty and slightly bitter. In this first course the amberjack bottarga is accompanied by lemon juice, extra virgin olive oil, basil and wild fennel.
