Boiled biscuits, also known as "affuca parrini" or "scaurati biscuits", are typical biscuits of Ragusan cuisine. These are crunchy biscuits that are first blanched and then baked in the oven and which can be enjoyed as a snack between sweet and savory. In fact, boiled biscuits are flavored with lemon juice and aniseed or fennel seeds.
Boiled biscuits are officially recognized and included in the list of traditional Italian food products.
