The busiate are strips of long and thin pasta rolled in a very tight spiral, a typical format of the Trapani area. Various legends circulate about the origin of the term, according to some the name refers to the busio, the ancient knitting needle used for making the dough; according to others, the name refers to the buso, that is the reed cane, also used for the processing of the dough.
