Pantelleria capers are the only recognized superior quality capers. Cappero di Pantelleria PGI has a globular, subspherical shape, rarely long and conical, green in color tending to mustard. The smell is strong and characteristic; the flavor is aromatic and typically salty. The caper of Pantelleria has been known since ancient times, in fact already mentioned by authors such as Dioscorides and Pliny. It has found its ideal habitat on the volcanic island in the center of the Mediterranean: the soil of volcanic origin and extremely arid due to the low rainfall, is the ideal environment for the cultivation of capers.
