The Onion of Giarratana is an extraordinarily large onion typical of Ragusa, whose weight can vary from 500 grams up to a weight of three kilograms. Another peculiarity of this onion is its distinctly sweet flavor. There are countless Ragusa recipes in which it is used - one above all the caponata - but its sweetness makes it suitable to be eaten raw.
