Couscous, a dish of Arab origin, has now become part of the Sicilian culinary tradition, in particular of the Trapani area. Pantelleria couscous, known as pantesco couscous or couscous alla pantesco , is based on fresh fish and fried vegetables, and is moistened with a sauce, more or less spicy, obtained by cooking fish. In Pantelleria couscous is still prepared with the traditional method which requires several hours of work.
