Pasta 'ncasciata is a unique dish of the Messina tradition and in particular of the municipality of Mistretta, now widespread throughout Sicily. The 'ncasciata or' ncaciata pasta takes its name from the cooking technique, which involved lining the casserole with the glowing embers on which it was placed. The recipe, which differs from baked pasta or timbales in that it consists of a single layer, is prepared with macaroni, minced meat, caciocavallo, aubergines and tomato sauce: after having cooked and incorporated all the ingredients, they are put in the oven well sprinkled with Parmesan.
