Ricotta iblea is a Sicilian excellence and thanks to its characteristics it has been recognized as a traditional Italian food product. It is a typical product of the Ragusa area and is obtained from the DOP milk of the native Modicana cow that is raised in the wild on the highlands between Modica and Ragusa. One of its peculiarities is the addition to whole and raw whey. The milk from Ragusa has unique aromatic characteristics, in fact it contains hints of spontaneous Iblean vegetation.
