The Bread of Monreale is a Traditional Agri-food Product of the Sicily region.
The processing of this type of bread requires that the dough is handled for a long time and that it undergoes a double leavening, at the end of which the dough is divided in loaves or in long loaves. Before the second leavening, the baker lets a generous sprinkling of sesame seeds fall to the surface, which enrich both the smell and taste of the bread.
