The Italian Etna DOC denomination is based on the territory on the slopes of Etna, the active volcano of 3330 meters that dominates the north-eastern corner of Sicily. These are products that have very particular aromas, which often recall the volcanic land from which they are born, with slightly smoky aromas and a brackish palate that evokes the sea. Great whites that combine beautifully with complex shellfish and fish dishes, such as stuffed cuttlefish or tuna in a pistachio crust, but which in terms of structure can also accompany white meat preparations. Likewise, reds are perfect with structured dishes, such as stuffed roasts and rare red meats.
