The wild fennel, also known as fennel and in Sicily as fennel Rizzo, is widespread in the coastal areas of southern Italy, and in particular in Sicily which seems to be the territory ideal for the development of this plant which finds many uses right here. Its aromatic properties are well known, especially for its use in the kitchen. It is used as a condiment for fatty meats, such as pork sausage which in many places is seasoned with fennel seeds, as a condiment in pasta with sardines, in the preparation of liqueur, in soups with legumes and in other recipes.
