The frittola is a typical dish of the traditional Palermo street food. It is a heterogeneous set of calf offal, such as slaughtering waste, fat, small cartilage, bones ... which are first boiled at very high temperature in order to detach the residues of meat from the bones and soften the calluses, then browned. , often with lard. The frittola is served seasoned with salt and pepper and lots of lemon.
