Sicilian Stimparata

The "Stimpirata" is a typical dish of the Sicilian tradition. It is a condiment made with potatoes, carrots, olives and other vegetables stir-fried with garlic, mint, oil and vinegar. This mix of vegetables and aromas is used as a condiment for the main ingredient such as meat, fish or game.
The term "stimparata" derives from "dilute", in fact vinegar was used in the past above all to dampen the strong taste of game meat.
