Badda Bean from Polizzi

The Badda Bean is a typical product and Slow Food Presidium of Polizzi Generosa. It is a round-shaped legume, hence the name badda , a Sicilian term for the ball . It is characterized by a high digestibility and a double color: ivory with pinkish spots or ivory with dark purple spots tending to black. A sapid bean, with herbaceous and even brackish notes, slightly astringent, with hints of chestnut and almond in the finish. When cooked it acquires a correct creaminess, without flaking.
The badda bean is a basic ingredient of some of the traditional recipes of Polizzi Generosa's cuisine, such as homemade tagliatelle with green beans and pacchio peaks, and fasoli chi finucchieddi.
