U cunigghiu from Polizzi Generosa is a second course based on fish typical of the culinary tradition of Polizzi Generosa. As often happens in Sicily, some traditional dishes arise from the desire to bring to the poorest tables dishes that recall noble dishes, where often the main ingredient, more delicious, expensive and difficult to find, is replaced with one easier to find. In this case the u cunigghiu dish is a reinterpretation of the rabbit hunter where the rabbit is replaced with cod.
